Healthier chocolate cheesecake recipe

When I went dairy free I thought cheesecake was just one of those things I would never eat again. This week I started looking up a variety of vegan cheesecake recipes. My biggest fear was that it wouldn’t set properly, and ideally I didn’t want to have to keep the cheesecake in the freezer.

Shoutout to the Minimalist Baker. This is the PERFECT recipe. It definitely made up for my failed pancake attempts earlier in the week. I only had a 4 inch cake tin so I had to adjust the quantities.

Dairy free chcocolate cheesecake


  • 3/4 dates
  • 1 cup ground almonds
  • heaped tbl spoon cacao powder
  • 2 tsp cocunut oil


  • 1 cup smooth cashew butter
  • juice of 1/2 lemon
  • 4 heaped dessert spoons cocunut oil
  • 4 heaped dessert spoons honey
  • 250ml cocunut cream
  • 100g 70% Green and Blacks dark chocolate

Method – For the base blend the dates and the cocunut oil together. Using your fingers combine the date mixture with the almonds and cacao powder.

Cut out a circle of greaseproof paper and line the base of a 4 inch tin (with removable bottom). Press the base mixture into the bottom of the tin.

For the filling melt the chocolate in a bowl over a pan of simmering water (make sure the water does not touch the bottom of the bowl – the chocolate will burn).

Once the chocolate has cooled a little add it to a bowl with the rest of the filling ingredients. Blend together and pour into the tin over the base.

It sets perfectly in the fridge – keep it in there at least an hour before serving. Or if you can’t wait, 20 minutes in the freezer should do.

I finally made something that my housemates are also in love with! Can’t recommend this recipe highly enough and excited to try out some more of the Minimalist Baker recipes and take inspiration from them.

It is super rich and creamy, love the contrasting texture of the base and the lemon goes perfectly. Also this cheesecake could so easily be made vegan if you use dairy free chocolate and an alternative to honey (rice malt syrup?).
